Sourdough 101

Class Description: Calling all sourdough fanatics, our most requested class is finally here! Whether you are a seasoned bread-baker or you’ve never made bread a day in your life… this 2-hour class is for you! From building your very first starter to mastering harder techniques, you’ll learn everything about sourdough—from creating and maintaining a lively starter, understanding fermentation, performing bowl folds and coil folds, managing rest periods, shaping, scoring, and baking beautiful loaves with that perfect open crumb. We’ll cover timing, troubleshooting, and all the tips and tricks that turn good bread into exceptional bread. Whether you’re just starting your sourdough journey or looking to elevate your skills, this class will give you the confidence and knowledge to bake consistently great sourdough at home. What to Expect: We will cover everything you have ever wanted to know about Sourdough. We will cover sourdough vocabulary, scaling, making and maintaining a starter, how to “pause” your starter, troubleshooting failed starters, correct folding and coiling techniques, baking techniques, and any additional questions you may have… And we will of course, taste some sourdough! What am I taking home? Each student will receive a little sourdough notebook for taking notes during class and tracking their at-home sourdough journey, multiple take-home recipe cards (including Chef Julia’s classic sourdough recipe and a few additional sourdough-based recipes), and some of Chef Julia’s dehydrated starter to take home! Dress Code: Please wear comfortable, close-toed shoes (chairs are provided but there will be a lot of standing). Please avoid flowy clothing and tie back any long hair. * Participants are responsible for managing their own food allergies; L’Atelier recipes are developed using common cooking and baking ingredients that may or may not be specified in the menu titles, including various fruits and vegetables, nuts, spices, wheat flours, etc. If you have a food allergy, please contact us before attending the class. Adjustments to recipes cannot be made during class, and we cannot guarantee an allergen-free environment. ** Children under the age of 16 must be accompanied by an adult.
